Sourced from the mountainous coffee-growing regions of Peru, this organic decaffeinated coffee brings together coffees from Chirinos, Finca Churupampa, and PERHUSA. The Cajamarca region in northern Peru, home to Chirinos and Finca Churupampa, is known for its high elevations, favorable growing conditions, and smallholder coffee production. Following harvest, the coffees undergo fully washed processing, in which the fruit is removed before drying. The Swiss Water® Process is a chemical-solvent-free decaffeination method that uses water, temperature, time, and carbon filtration to remove 99.9% of caffeine from green coffee. The process uses Green Coffee Extract (GCE), a solution containing the naturally occurring soluble compounds found in coffee, to selectively extract caffeine while retaining much of the coffee's original flavor and character. This approach allows roasters to offer decaffeinated coffee without the use of chemical solvents.
