Cundinamarca, located in Colombia's Andean highlands, offers diverse elevations, fertile soils, and favorable growing conditions for Arabica coffee. These conditions support the development of coffees with natural sweetness, balanced acidity, and complex flavor characteristics.

The coffee is typically fully washed, a processing method that removes the fruit from the coffee seed before drying. This approach produces a clean, consistent cup that allows the coffee's natural flavors to shine.

The Swiss Water® Process is a chemical-solvent-free decaffeination method that uses water, temperature, time, and carbon filtration to remove 99.9% of caffeine from green coffee. Using Green Coffee Extract (GCE), a solution containing the naturally occurring soluble compounds found in coffee, the process selectively removes caffeine while preserving much of the coffee's original flavor and character. This allows roasters to offer a flavorful decaf without the use of chemical solvents.
